Title: Maccheroni Con Broccoli (Shells with Broccoli) - Italian

Yield: 4 Servings

1 lb Small pasta shells Freshly ground black pepper 4 c Finely chopped broccoli ******** Stalks 3/4 c Freshly grated pecorino 6 Garlic cloves, minced 1/2 c Olive oil : Romano (or to taste) : Extra virgin olive oil

Heat a large covered pot of water. When water comes to rapid boil, add pasta. Stir; cover pot until water boils again.

Meanwhile, in large cast iron skillet, saute broccoli and garlic in olive oil until garlic is golden, but not brown, and broccoli is bright green and crisp-tender. Add plenty of freshly ground black pepper. Pour a couple of spoonfuls of pasta water into the skillet to steam broccoli.

When pasta is al dente, drain and put into warmed serving dishes. Top with broccoli mixture and grated cheese. Drizzle on a little extra virgin olive oil if you like. Serve immediately.
